Duncan Ray is the only resident chef who will be serving you for your dinner and his approach is all about the attention to detail. Duncan prepares just a small amount of covers/ dinners on a given evening – perhaps only for 20 people. I'll be brief, because a place this good deserves hyperbole. Here goes: It is expensive. It is quiet. It is the best restaurant in Brighton and Hove.
