If you like to go where the locals go then check out Duggan's Deli shop. It's a little hole in the wall that makes the best sandwiches and it's reasonably priced. It's best to get a sandwich to go and sit at a picinick table by the river. It's a block off the main street next to the river. A little hard to find the first time but you'll go back. It only open for lunch.

We enjoyed the beer flavored with lime and grapefruit. They have just about any beer you may like and many more you've never heard of.

On your drive from Denver stop in Idaho Springs and have lunch at Beau Jo's. Their pizza is famous and may just be about the best pizza in the world. The crust is sweeter than most pizza and they serve honey with their pizza. It sounds kind of strange but it really is good. The peach cobbler is good too. And they have a good selection beer on tap.
If you want easy to medium hike to burn off the pizza and beer try St Mary's glacier.

We rented bikes from Alpine Sports for our 14 mile ride down the mountain from midway to Aspen into Frisco. The bikes are comfortable, well maintained with good brakes. The staff is friendly and will let you ride the bikes around town while you wait for the next ride up to the starting point. They pick you and the bikes up in Frisco. They are also knowledgable about places to hike, bike and ski (even in the spring if you're willing to hike). They have some great stories on local lore.
