Brian and Holly are Gilbert's Cheese Experience: we host cheese-pairing pop-ups on-site with Seattle-area food and beverage producers, providing a delicious sampling of locally procured products and insider access to local craft producers. This event pairs Washington state cheeses with natural and biodynamic wines from Wilridge Winery and single-origin chocolate from our host, indi chocolate. First, we'll tell you about our mission and philosophy, and explain the importance of getting connected to your local food and beverage ecosystem. Then representatives from Wilridge Winery and indi chocolate will share their story and tell you about their craft. We'll teach you how cheese is made, and lead you through how to do a proper tasting. Then we'll cut you loose to sample the pairings we've selected, and to mix and match your own! This is a fun, interactive time where you can ask questions, exchange ideas and discuss what you're experiencing with us, the producers and other guests. Finally, we'll come back together for a group chat about the pairings and to share our favorites with each other. You'll leave satiated, satisfied and having learned a few things, too! This event includes three samples of local cheeses, three sample pours of Wilridge Winery's natural and biodynamic wines and three samples of single-origin indi chocolate. Brian & Holly
Brian Gilbert is a 20-year veteran of the food and beverage industry with a lifetime of passion behind him. He is a Certified Cheese Professional (CCP), and also serves as Head Cheesemonger at Beecher’s Cheese in Seattle's Pike Place Market. Brian has spent nearly a decade making, aging, selling and procuring cheese while educating the community. His mission is to convey food's vital role in local ecosystems and how that knowledge makes us better consumers and citizens. Holly Regan is a professional writer, editor and marketer with subject-matter expertise in food, beverage and travel. She is an aspiring vegetarian chef, food blogger and content business owner. With a background in anthropology; her mission is to explore and connect the world’s cultures, people and places as expressed through their art, customs and cuisine.

As the oldest farmer's market in Seattle, Pike Place is where food and beverage producers have gathered to share their wares since the city was founded. It's the heart and soul of Seattle's food culture, and a perfect place for our pairing!
