We are bean-to-bar chocolate makers, that means that we make the chocolate from ethically sourced beans and transform it into delicious bars! - First, I will go through the history of chocolate and the bean-to-bar movement and explain what sets us apart! -Together, we will walk through the steps of how we make our chocolate. You will have the chance to try your hand at it by jumping into where we are in the process that day to get a feel for it yourself. -Steps: sorting the beans, roasting, winnowing, steps of the cacao grinder, ageing the chocolate, tempering and molding into bars, wrapping the bars. -We will then delight in a tasting of our bars together and discuss the flavour profiles of the different origins that we work with. A lot like with wine and coffee, we like to take the time to really taste the chocolate and note of what makes each bean unique! -We will also be serving you our yummy hot chocolate and cacao tea or other treats, your choice! -To end the visit on a high note, we've made up a list of our favourite businesses in our neighbourhood so that you have a chance to take in all of the sights after the workshop is done.
We're Isabella and Catherine. We both love chocolate and sharing what we make with others. Isabella: I'm a chocolate maker at Avanaa Chocolat. I studied as a pastry chef and chocolatier, but bean-to-bar chocolate became my focus. I've traveled to cocoa plantations and to several chocolate makers around the world. While working as a chocolate sommelier, I had the opportunity to be a judge at the International Chocolate Awards. Feel free to ask me all of your chocolate questions. Catherine: I started Avanaa chocolate a few years ago when I was in Oaxaca, Mexico and witnessed a woman making chocolate with local beans. I left my career as a geologist and traveled the world for a year visiting plantations and learning about chocolate. I opened up my little shop in Montreal and have a wonderful following of local clients.
We will be tasting the full collection of Avanaa's chocolate bars to discover the flavour profiles of each bean!
You will have a choice between Avanaa's signature hot chocolate or our lighter cacao tea.
