Do you wonder why Cincinnati is called "Porkopolis?" What's with all the pigs around town? I'll meet you at Findlay Market and we'll get into the history of pork in Cincinnati. We'll walk through the market and I'll introduce you to the butchers at Eckerlin Meats, a sixth-generation family business. If you're not from Cincinnati, you probably haven't heard of goetta. We'll taste this pork-based specialty and see how the family at Eckerlin's makes some of the best goetta in town. Next, we'll walk through the Over-the-Rhine neighborhood along the same streets where the German immigrants herded hogs to slaughterhouses in the 1800's. Finally, I'll introduce you to Nino Loreto, owner and butcher at Panino. You'll see how he pays homage to the pig. We'll visit his on-site meat processing chamber, down a couple flights of stairs below his restaurant in a 19th century building. We'll chat with Nino to learn more about how his grandfather introduced him to butchering. We'll watch Nino at work and tour his curing room. Then we'll go back upstairs to his restaurant to sit down and enjoy some of his house-made meats and a glass of wine.
You will taste goetta, a unique Cincinnati pork-based specialty, and house-made charcuterie.
Bottled water will be provided. A glass of wine is included at Panino. Additional drinks are available for purchase.
After teaching school, managing our family construction business, and raising a family, I stumbled into the community surrounding historic Findlay Market. The small business owners there inspired me to share their story, and Cincinnati Food Tours launched in 2012. Since then, I have grown my business and built relationships with local restaurants. Of course, I enjoy the food, the history, and the culture of Cincinnati, but I really love the people. Then we'll walk through the Over-the-Rhine neighborhood to a restaurant called Panino. We'll go down several flights of stairs to the basement. Here, Nino will give us an exclusive tour of where he does the butchering and curing of the locally sourced meats that he serves.
