Learn to make chocolate from scratch, right where it grows!

You'll learn the entire process from tree to bar, making chocolate from scratch: roasting, grinding, tempering then molding. With tasting all along the way.
Starting with the trees we'll talk about cultivation and harvesting and the role of fermentation and drying in the flavours of the chocolate. Then we'll make chocolate. You'll be grinding beans in our cast iron hand mills and winnowing the old fashioned way, then we'll be sharing the secrets of tempering before the delicate practice of molding the bars. Puerto Viejo has a long long history of cacao production and we'll share that history with you, talking about the characters and stories of the area as we teach you how to make great chocolate. You'll be joining our happy, tiny team of 4. There will be lots to learn and taste, from flavour development to label design, this is a full experience! This experience is the most hands on in the area, you will get chocolate on you!

Making chocolate is an art, a delicious one. The Puerto Viejo area has been growing cacao for over 400 years and now you can experience how chocolate is made by hand, as it has been for centuries, and as it is now. The smells, textures and tastes of the chocolate making process will give you a truly authentic appreciation for the most loved sweet in the world. We have been growing organic cacao on our farm for over three decades and have been producing our award winning chocolate onsite. In this 3 hour experience you’ll participate in all aspects of the production, from roasting to wrapping.

I’ll be working with Sam Olvera, a chocolate maker and connoisseur specializing in the art of cacao bean fermentation. Sam will sometimes host classes, we’re really lucky to have her join us!

Где вы побываете

We'll be at Talamanca Chocolate in Playa Negra, Puerto Viejo. Part of our farm is a Botanical Garden, open to the public. After your experience why not tour the garden: we grow over 160 varieties of tropical fruit and nut trees. Our farm is home to many many native animals, amphibians, birds and reptiles. We often see sloths and toucans right out of the window as we make the chocolate. We're an easy 7 minute bike ride, from the center of town.

Ancel is very knowledgeable about the chocolate making process, as well as the local culture and history. We thoroughly enjoyed our afternoon and highly recommend her workshop. We learned so much!

Ancel, Sam and Sol are incredible people and this was such a special workshop. Warren and I learned so much about mama cacao and her beautiful use cases and history, plus made amazing original Mayan hot chocolate and some 75% cacao bars to take home with us. Plus, the farm, chickens, ducks, doggie and the kitty cat were a wonderful addition. This is a must do on the Caribbean coast and we’re so happy we booked it. Thanks again!!

Making chocolate at Ancel's was my favorite thing about my recent trip to Puerto Viejo. Our host Sam started by giving us a brief overview of the Cacao tree. We got to eat cacao in all of its forms including the fruit, raw and roasted beans, and of course, chocolate. I'm a vegan foodie nerd who makes a lot of things from scratch, so this was such a fun and engaging experience. We learned all about how the beans are fermented, roasted, and ground, and even got a brief chemistry lesson in three different ways to temper chocolate. We each went home with 2 30g chocolate bars. Visitors may choose to buy more chocolate and even put in special orders! I was able to order a 1/2 kilo of vegan white chocolate (which is nearly impossible to find) and pick it up the next day. If you want to try before you buy, you can also find their chocolate at the Tuyo coffee shop in town or at the Saturday Farmers market on calle 215. If you love food science or chocolate or BOTH, we would highly recommend!
