Чем вы займетесь

You'll learn the entire process from tree to bar, making chocolate from scratch: roasting, grinding, tempering then molding. With tasting all along the way.
Starting with the trees we'll talk about cultivation and harvesting and the role of fermentation and drying in the flavours of the chocolate. Then we'll make chocolate. You'll be grinding beans in our cast iron hand mills and winnowing the old fashioned way, then we'll be sharing the secrets of tempering before the delicate practice of molding the bars. Puerto Viejo has a long long history of cacao production and we'll share that history with you, talking about the characters and stories of the area as we teach you how to make great chocolate. You'll be joining our happy, tiny team of 4. There will be lots to learn and taste, from flavour development to label design, this is a full experience! This experience is the most hands on in the area, you will get chocolate on you!
Other things to note
We are a short walk from Puerto Viejo along the beautiful black sand beach of Playa Negra. Our farm is a forest of fruit, native and nut trees and the coolness of lush jungle is refreshing.

Making chocolate is an art, a delicious one. The Puerto Viejo area has been growing cacao for over 400 years and now you can experience how chocolate is made by hand, as it has been for centuries, and as it is now. The smells, textures and tastes of the chocolate making process will give you a truly authentic appreciation for the most loved sweet in the world. We have been growing organic cacao on our farm for over three decades and have been producing our award winning chocolate onsite. In this 3 hour experience you’ll participate in all aspects of the production, from roasting to wrapping.

I’ll be working with Sam Olvera, a chocolate maker and connoisseur specializing in the art of cacao bean fermentation. Sam will sometimes host classes, we’re really lucky to have her join us!

Где вы побываете

We'll be at Talamanca Chocolate in Playa Negra, Puerto Viejo. Part of our farm is a Botanical Garden, open to the public. After your experience why not tour the garden: we grow over 160 varieties of tropical fruit and nut trees. Our farm is home to many many native animals, amphibians, birds and reptiles. We often see sloths and toucans right out of the window as we make the chocolate. We're an easy 7 minute bike ride, from the center of town.

A wonderful experience learning about all things cacao in wonderful location. I loved learning about not only the history of cacao in the region, but of it medicinal properties and it’s incarnation into the chocolate we consume today. Loved the chocolate making process from pod to bar.

Toen ik net in Costa Rica was, werd ik overweldigd door de hoeveelheid leven, plantaardig, dierlijk en wat buiten die categorien valt. Op de boerderij van Ancel en in haar keuken, borrelt het leven je aan alle kanten tegemoet. Overal staan potten met fermenterende groente en fruit, er lopen kippen, ganzen, eenden en honden rond, en in de tuin groeien de cacaobomen. Geweldig om het hele proces te zien, van het bloempje aan de boom tot de chocola in de keuken. Ancel weet ongelooflijk veel en is een geweldige verhalenverteller, dus hier kun je echt wat leren.

We participated with our two kids 6&8 years old. There was so much knowledge and facts in Ancel and you could asked her anything regarding plants and chocolate, it was super interesting. She let the kids be very hands on as there didn’t understand English and made it a good experience for them as well. Highly recommended experience 🌟

I came to this class with zero knowledge or passion for cacao and left obsessed... this all thanks to Ancel's knowledge, passion, and incredibly warm and welcoming demeanor. I learned so much about the cacao tree & bean as well as about the chocolate making process. The location was serene and so inviting. One of my favorite experiences in Costa Rica and beyond!

Ancel is a gorgeous medicine Woman and has so much wisdom and honor about the cacao tree and it's wholeness! We really enjoyed her spirit and her invitation to dive deeper into the world of cacao. the chocolate is so tasty!! totally recommended!

This was such an interesting day! Ancel had all kinds of ideas and experiences, and this was less of a chocolate-making class than a meander through a thousands topics related to Costa Rican history, ecology, chocolate, education, etc. Which is what we were interested in too; maybe if you just wanted to talk about chocolate that would be all that you got! When we were done, I felt like I really had more skills and vocabulary to think about what I liked about chocolate and why, and what way the chocolate might have been processed to make those changes. It will make eating and cooking with chocolate much more interesting on an ongoing basis!
